A Two-Day Culinary Tour in the Galilee

A Celebration of Seasonal Local Foods, Cultural Encounters and Historical Insight

Day 1

Start the day at around 11:00 at a Spice Farm where we'll sample the different herbs that are in season, with an explanation about the local foods of the Galilee.  Then we'll continue to a nearby Bedouin village and meet with a family who will teach us how to prepare seasonal specialties (stuffed grape leaves in the summer, edible wild plants in the winter), including fariki (roasted green wheat). After the cooking, we will sit with them and enjoy a traditional lunch.  We will have a sweet conclusion to the day in another village where they make excellent "knaffe" - a cheese-based relative of baklava which is a regional specialty.  Finish day at around 4:00. 

Day 2

Start the day at 10:00 at an organic olive press, to learn about and taste their olives and oil.  Then continue to the Tsippori National Park where we will see what the famous mosaics tell us about wine-drinking habits in the 1st and 2nd Century CE.   We will finish the day at an off-the-beaten-track goat farm for an exceptional lunch based on home-made goat cheeses and other fresh seasonal ingredients (eating while reclining...).  Finish day at around 3:00

The tour takes place in the region of the Lower Galilee - about 2 hours drive north from Tel Aviv or Jerusalem.   I can recommend a lovely and convenient B&B for the overnight (price not included).
